Parsley, scientific name Petroselinum crispum, is a biennial, flowering plant of the Apiaceae family, native to the central Mediterranean (southern Italy, Greece, Portugal, Spain, Malta), which reaches 70cm. in height and is widely cultivated as an herb, spice and vegetable. Its therapeutic value has been known since ancient times. Greek and Roman doctors used it for kidney and bladder disorders, while the essential oil of the plant was used from the 16th century for the same purposes. In 2002 the "World Journal of Urology" published an article by Yarnell, which stated that a series of animal studies confirmed that parsley improves the function of the urinary system.

Parsley essential oil is obtained by distilling the seeds and has a spicy, refreshing, slightly astringent aroma. The main molecules of its chemotype composition are: volatile oils, such as myristicin, limonene, eugenol and monoterpene, substances which give it antiseptic, disinfectant, analgesic, digestive, emmenagogue and diuretic properties.
