Parselinum crispum (Petroselinum crispum) is a two-year, flowering plant of the Apiaceae family, indigenous to the central Mediterranean (southern Italy, Greece, Portugal, Spain, Malta), reaching 70 cm. in height and is widely grown as a herb, spice and vegetable. Its therapeutic value has been known since antiquity. The Greek and Roman doctors used it for kidney and bladder disorders, and the plant's essential oil was used since the 16th century for the same purposes. In 2002, the journal "World Journal of Urology" published a Yarnell article, which reported that a number of animal studies confirmed that parsley improves the functioning of the urinary system.

Parsley essential oil is obtained from the distillation of the seeds and has a spicy, refreshing, lightly scented aroma. The main molecules of its chemotype are: volatile oils such as myristine, limonene, eugenol and monoterpene, which give it antiseptic, disinfectant, analgesic, digestive, menopausal and diuretic properties.
