The Kozani Rose oil is an essential oil extracted by extraction or distillation of fresh rose petals plant Rosa Damascene Miller of the family Rosaceae.

Harvesting is done by hand from dawn to sunrise ( 5:30 a.m. to 8:30 a.m. ) and the harvest period lasts 20-25 days , from mid-May until mid-June or so, depending on soil and climate conditions in the region of Kozani Voio .
